Cover Everything with AWESOME SAUCE


I have a wheel.  A wheel of breakfast and a wheel of lunches. So I have two wheels. Well…probably three. BUT THAT’S NOT THE POINT. The point is that I eat similar things for each meal every day and that shit gets boring sometimes. So, I change it up. Even if the change is slight. I’m in the process of revamping the entire wheel and will post accordingly, but now, I will share the slight change of which I speak: maki. With different stuff in it.


I’m sure you recall my carrot maki post (and if you don’t, clearly you hate me and everything I stand for). Think that, only bigger, better and more awesome. Think Kimchi Tofu Maki with Awesome Sauce.


Awesome Sauce. Look how awesome. LOOKATIT.


1 sheet Nori

1 ounce Tofu (3” by 1/2”)

2-3 slices Avocado (doesn’t count if it’s not ripe)

1 slice Red onion

1 stalk Celery (shaved)

1 small Yellow squash, shredded (1/4-1/3 cup)

2 ounces Kimchi (squeezed dry)

1 tablespoon Fried onion

½ cup Spinach leaves

Soy Sauce

Awesome Sauce

  1. Heat a small frying pan on high and spray with non-stick spray
  2. Allow spray to go brown, then add tofu slice
  3. Season side-up with salt (and pepper) and sear for 1 minute (maybe a minute and 15 seconds, depending on how angry your stove is)
  4. Flip and sear another minute, then remove from pan, slice in half (length-wise so you have tofu fingers) and allow to cool slightly as you assemble
  5. Assemble in following order (using you sushi mat):
    1. Avocado
    2. Onion slices
    3. Shaved celery
    4. Season with salt (and pepper)
    5. Tofu
    6. Shredded squash
    7. Kimchi
    8. Crispy onion (along the bottom
    9. Spinach leaves
  6. Brush Exposed nori with soy sauce and roll that baby up
